Tomato Sauce with Zucchini

Thanks to Karen George for this recipe.

Heat 1-2 tablespoons of olive oil in a 9 or 10 inch pan.  Add some chopped onion and saute until translucent.  Add a chopped garlic glove and some dried oregano and/or dried basil and saute a little more.  Add some zucchini cut into half-inch cubes, and some salt and pepper, and stir.  Cover and cook 5-10 minutes over medium heat.  Add some jarred spaghetti sauce (to whatever consistency looks good to you). Heat through and serve over pasta.

 

Variations:

Add crushed red pepper (1/4 teaspoon) for a little heat.

Use fresh oregano and/or fresh basil.

Use some of those delicious CSA tomatoes - dice them and add them to the oil, onion, garlic and zucchini (may want to increase the amount of garlic and add a little salt).  Let them cook down until flavors come together.  Add a handful fresh basil at the end.
